A simple yet incredibly delicious salad! My feta spinach salad is loaded with goodies such as crumbled feta cheese, sliced zucchini, and avocado. I love to use a sweet raspberry vinaigrette as a dressing – it goes so well with the spinach and feta! I can enjoy this salad several times a week, especially during the summer with plentiful fresh veggies! Also, try it alongside my ‘Grilled Ribeye Steak’ or even my ‘Cedar-Plank Salmon’ recipe!

How to Make a Spinach Salad

You’ll love just how easy it is to make this spinach, feta and zucchini salad! You can prepare this salad in one large bowl and serve it family style. Or, prepare it in individual bowls.

  1. First, add a generous amount of fresh, organic baby spinach. I love baby spinach because it’s very soft and more sweet in flavor.
  2. Next, it’s time to add the veggies. I top the spinach with sliced red bell pepper, sliced green zucchini, sliced avocado and mushrooms. Feel free to change up the toppings to include your favorites! You can also use sliced cucumbers in place of the raw zucchini.
  3. For some added crunchiness, I add salted pistachios or slivered almonds. Pumpkin seeds would also work great for this recipe!
  4. Top everything off with crumbled feta cheese for extra creaminess! Add the dressing on top and enjoy!

Raspberry Vinaigrette Dressing

Once you have the feta spinach salad assembled, it’s time to add the dressing! Add the dressing once you are ready to serve. I really enjoy this salad with a sweet raspberry vinaigrette! The sweetness from the berries adds something so special to this easy salad recipe!

  • Don’t have raspberry dressing? Use a zesty Italian dressing and add whole raspberries into the salad instead!

Feta Spinach Salad with Raspberry Vinaigrette

Easy and delicious spinach salad recipe with feta cheese, raspberry vinaigrette, zucchini and avocado!

Ingredients 

  • 8 to 10 cups organic baby spinach
  • 1 large avocado, sliced
  • 1/2 to 1 red bell pepper, sliced
  • 1 small zucchini, sliced
  • 4 to 5 white mushrooms, sliced
  • 1/4 cup pistachios or slivered almonds
  • 1/3 cup crumbled feta cheese
  • 1/2 cup raspberry vinaigrette
  • 2 tbsp soy sauce or tamari, optional
