Easy Avocado Shrimp Ceviche

Easy and delicious recipe for avocado shrimp ceviche – perfect as an appetizer for any gathering! It’s made with loads of creamy avocado, lime juice and juicy shrimp! This recipe brings back memories of Mexico, the ocean and warm summer evenings! Plus, it’s quick and easy to make and great for making ahead of time, too!

Ingredients for Shrimp Ceviche

Here are the main ingredients you’ll need to make this easy seafood appetizer!

  • Raw Shrimp: ceviche is made using raw shrimp, which are ‘cooked’ in acid. In this case, we’re using lime juice. Use wild-caught shrimp for the best tasting ceviche.
  • Lime Juice: freshly squeezed lime juice is the best option for this recipe. Bottled juice will also work in a pinch.
  • Avocado: use ripe avocados for a creamy and rich ceviche!
  • Tomatoes: any variety of tomatoes will work well. Organic heirloom tomatoes will taste the best.
  • Cilantro: a sprinkle of refreshing cilantro is a must for this recipe!

How to Make Avocado Shrimp Ceviche

You’ll love how quickly this shrimp ceviche with avocado comes together! Here’s how it’s done:

  1. Start with the shrimp! Peel and clean the shrimp, leaving several with the tails on for garnish, if desired. Preheat a large pot of water to a simmer. Add the shrimp and cook it for 2 minutes, just until they start to turn pink.
  2. Remove the shrimp immediately and shock it in a large bowl of ice to stop the cooking process. Once the shrimp are cooled, place them into small bowl and pour over the 1 cup lime juice. Cover and refrigerate the shrimp overnight or at least 1 hour.
  3. To assemble the ceviche, discard lime juice marinade. We’ll add fresh lime juice! Chop the shrimp into small chunks and place them into a large bowl along with diced avocado, tomato, green onion, cilantro, salt, and remaining lime juice. If desired, add some diced cucumber for crunchiness.
  4. Toss the ceviche gently with a rubber spatula or spoon and enjoy!

Serving Ceviche

Since this recipe contains raw shrimp, it’s important to keep this seafood appetizer chilled! Keep it in the refrigerator until you’re ready to serve it.

  • Serve the avocado ceviche in small serving bowls with a spoon and a full shrimp on top! This option is perfect for cocktail parties.

Ingredients 

  • 1 pound extra-large raw shrimp
  • 1 cup freshly squeezed lime juice
  • 2 large, ripe avocados, diced
  • 2 large Roma tomatoes, diced
  • 3 green onions, diced
  • 1/2 cup diced cucumber, optional
  • small bunch cilantro, chopped
  • 1/2 cup freshly squeezed lime juice
  • 1 teaspoon salt
  • tortilla chips or soft tortilla rounds
