Making the Blueberry Mousse
You’ll love the light and fluffy mousse layer in these mousse parfait cups! For the blueberry lemon mousse layer, I start with loads of real blueberries, sweetened condensed milk and lots of lemon zest for some real lemon flavor. Pulse the blueberries with the condensed milk to create a fruit puree. This puree is then combined with whipped cream and a little bit of gelatin to set the blueberry mousse. Once you try this mousse, you’ll know why I love it so much! It’s so fruity and zesty and melt-in-your-mouth delicious! Make sure to watch my video to see how I set the mousse at a diagonal. You can also let it set evenly.
Once the mousse sets for at least an hour, it’s time for the second half of these parfait cups! For the blueberry jello layer, I used blueberry flavored gelatin. Berry or lemon flavored Jello will also work great! If you want to go with a more homemade version without using Jello, consider using blueberry or berry juice and add regular gelatin or agar gelatin. You’ll need to dissolve the gelatin first, then add it to the juice to ensure that it sets. Garnish the top with lemon slices, blueberries and mint leaves.
