You just can’t go wrong with blueberry and lemon! These fruity dessert parfaits are made with a blueberry and lemon mousse, then topped with berry jello! For the blueberry lemon mousse layer, I start with loads of real blueberries, sweetened condensed milk and lots of lemon zest for some real lemon flavor. Once you try this mousse, you’ll know why I love it so much! It’s so fruity and zesty and melt-in-your-mouth delicious! For the blueberry jello layer, I used blueberry gelatin. If you want to go with a more home-made version without using J-ello, consider using blueberry or berry juice and add regular gelatin or agar gelatin. You’ll need to dissolve the gelatin first, then add it to the juice to ensure that it sets. Garnish the top with lemon slices, blueberries and mint leaves.
