  • Prosciutto: salty and thinly sliced prosciutto for topping.

How to Make Quail & Prosciutto Toast

It’s super easy to make this delicious avocado toast with quail eggs and prosciutto! Here’s how to put it together:

  1. Prepare the avocado spread first! Place the avocado into a large mixing bowl along with the mayonnaise, garlic, lemon or lime juice, salt and a touch of dill. Mash the avocado with a large fork until the mixture is smooth, then set it aside.
  2. Next, prepare the bread. Slice the bread on the diagonal for longer pieces. I like to spread the bread onto a baking sheet and toast it in the oven under the broiler. 
  3. Time for the quail eggs! Preheat a frying pan with a little bit of oil and drop in the quail eggs. The easiest way to crack them open is to use kitchen shears. Frying on one side only for that sunny-side-up finish!
  4. Assembling the toast: once the eggs are done, spread the avocado toast onto the toasted bread and top with sliced prosciutto and capers. Drop a quail egg on top and garnish with fresh chives.
  5. Enjoy right away!

For Topping:

  • 12 slices prosciutto

  • chives for garnish
