Avocado toast is the newest and best way to enjoy your toast in the morning! I’m sure FIVE different ways you can dress your avocado toast for even more flavor! All of the options are so delicious: bacon, corn and goat cheese; Italian bruschetta; poached egg and prosciutto; smoked salmon lox; and strawberry and honey! Have just one or one of each! This easy breakfast recipe is bound to become a favorite!

Avocado prep: for avocado puree/mash, scoop the avocado into a large bowl. Squeeze a bit of lemon juice to help preserve color and season with salt. Using a fork, mash the avocado into a chunky puree.
Strawberry & Honey Avocado Toast
The most unique avocado toast ever! Strawberries, a drizzle of honey, crunchy almonds and a touch of goat cheese make for such a delicious combination! You’ll love the sweet flavor of the berries and honey combined with creamy avocado. When making this version of toast, don’t add any salt to the mashed avocado.
Strawberry & Honey:
- 1 large avocado, mashed
- 4 slices bread of choice
- 10 large strawberries, sliced
- 1/4 cup crumbled goat cheese
- 1/4 cup sliced almonds
- 2 tbsp honey
Spread avocado puree over toasted bread. Add sliced strawberries to the top. Garnish with sliced almonds, crumbled goat cheese and drizzle with honey.
Smoked Salmon ‘Lox’ Avocado Toast
One of my personal favorites! Smoked salmon, cucumber, dill, capers and avocado – breakfast just doesn’t get any better than this! You can also try adding chopped boiled egg, lemon or even radishes on top to make it even more delicious. These sandwiches also make for a great seafood appetizer!
- 4 slices bread of choice
- 1 large avocado
- 4 ounces sliced smoked salmon
- 2 tbsp capers
- 2 tbsp fresh chopped dill
- 1 Persian cucumber, sliced
Spread avocado puree over toasted bread. Add sliced thinly sliced cucumber and sliced shallots. Top with smoked salmon; garnish with capers, minced chives and fresh dill.
Bacon & Corn Avocado Toast
Check out those bacon bits!! This bacon, corn and cheese avocado toast has so many great flavors and textures going on! I love the combination of smoky bacon with creamy avocado and sweet corn! Don’t like goat cheese? Try this version with cheddar cheese instead!
- 4 slices bread of choice
- 1 large avocado
- 4 slices smoked bacon
- 1/2 cup canned corn
- 1/4 cup crumbled goat cheese
Render a few slices of bacon in a sauté pan. Remove the bacon and dice into bacon bits. Reserve the rendered bacon fat and add the canned corn. Sear the corn until golden brown. To assemble the toast, add sliced avocado or avocado puree to toasted bread, and season with salt and red pepper flakes. Add bacon bits, seared corn and crumbled goat cheese.
Italian Bruschetta Avocado Toast
Enjoy this version of avocado toast with sliced cherry tomatoes, fresh mozzarella cheese, fresh chopped basil and a drizzle of balsamic dressing! For even more flavor, add some crushed garlic into the mashed avocado – the zestiness adds so much great flavor! I love this version as an appetizer, too!
- 4 slices bread of choices
- 1 large avocado
- 16 cherry tomatoes, sliced
- 1/2 cup small mozzarella balls, sliced
- small bunch fresh basil, chopped
- 2 to 3 tbsp balsamic vinegar
Top toasted bread with avocado puree. Add halved heirloom cherry tomatoes and cubed mozzarella pieces to the top. Garnish with chopped basil and balsamic glaze/vinegar. Season lightly with salt and enjoy!
Poached Egg & Prosciutto Avocado Toast
Top your avocado off with a poached egg and salty prosciutto for the ultimate breakfast sandwich! You’ll love the combination of saltiness with the creamy avocado!
- 4 slices bread of choice
- 1 large avocado
- 4 large eggs
- 4 slices prosciutto
Bring a small saucepan of water to a simmer. Add a splash of vinegar (about 1 tablespoon) and season the water with salt. Break one egg into a small ramekin, swirl the simmering water with a spoon, then drop the egg into the water. Cook regular eggs for 2 minutes, large eggs for 2 1/2 – 3 minutes. Egg white should be completely cooked but egg yolk soft and runny. Remove the poached egg onto a tray lined with a paper towel to absorb excess water.
Spread avocado puree over toasted bread, top with sliced prosciutto, add the poached egg. Season the poached egg with salt, pepper and smoked paprika. Enjoy immediately.
