Delicious and easy avocado toast topped with sunny-side-up quail eggs, prosciutto and capers!
Ingredients
For Avocado Spread:
2large, ripe avocados
3tablespoonsmayonnaise
3garlic cloves, very finely minced or pressed
1/2teaspoonsea salt
1tablespoonfresh dill, chopped
splash of lime juice, to preserve color
For Topping:
12slicesprosciutto
12quail eggs
2tablespoonscapers
chives for garnish
12slicestoasted fresh baguette
Instructions
Prepare the avocado spread first! Place the avocado into a large mixing bowl along with the mayonnaise, garlic, lemon or lime juice, salt and a touch of dill. Mash the avocado with a large fork until the mixture is smooth, then set it aside.
Next, prepare the bread.Slice the bread on the diagonal for longer pieces. I like to spread the bread onto a baking sheet and toast it in the oven under the broiler.
Time for the quail eggs!Preheat a frying pan with a little bit of oil and drop in the quail eggs. The easiest way to crack them open is to use kitchen shears. Frying on one side only for that sunny-side-up finish!
Assembling the toast: once the eggs are done, spread the avocado toast onto the toasted bread and top with sliced prosciutto and capers. Drop a quail egg on top and garnish with fresh chives.
