Garlicky Zucchini Tomato Crostini (video)
One of my favorite Ukrainian appetizers for summertime! These easy and garlicky zucchini tomato crostini are flavor packed with the taste of summer! Made with toasted, crispy baguette topped with garlicky mayo, fried zucchini, heirloom tomatoes, and a sprinkling of fresh dill. My mom used to make these all the time for us growing up. We had a huge garden with plenty of zucchini and tomatoes. Eating these zucchini crostini takes me right back to my childhood!

Ingredients for the Recipe
Simple and easy does it for this Ukrainian appetizer recipe! Here are the basic ingredients you’ll need to make these amazing tomato crostini at home!
- Zucchini – I like to use green zucchini, Mexican squash or yellow zucchini for this recipe. Keep the peel on for more texture.
- Tomatoes – the best tomatoes for this recipe are sweet and ripe heirloom tomatoes. They’ll add tons of flavor.
- Garlic – use fresh garlic for making the garlic mayo spread.
- Fresh Dill – a must for any savory Ukrainian recipe. This is the quintessential herb of the Eastern European cuisine.
- Bread – I like to use rustic and crispy French baguette but other types will also work well.
Frying the Zucchini
Start this recipe for zucchini crostini with the zucchini!
- Wash the zucchini first, then thinly slice it using a sharp knife or mandolin slicer. The slice shouldn’t be too thin or too thick. Spread the sliced zucchini flat, then season lightly with salt and pepper.
- Preheat a large, non-stick frying pan with a drizzle of cooking oil (I use avocado) over medium heat. Once the oil is hot, add the zucchini single layer into the frying pan. I usually do 2 to 3 batches.
- Fry the zucchini until it’s golden and crispy, then flip and fry the other side. Remove the fried zucchini onto a paper towel to absorb the excess oil. Keep the zucchini warm.
Making the Garlicky Mayo Spread
While you’re frying the zucchini, you can also get started on the garlic mayo spread. This adds an amazing garlicky punch to the crostini!
- Place the mayonnaise into a medium sized mixing bowl. Using a garlic press or a zester, press or grate the garlic into the bowl.
- Season the spread with salt, pepper and a sprinkling of fresh dill. Mix everything together with a spatula and that’s it.
Toasting the Bread
Next, prepare the bread. Preheat your oven broiler on the ‘high’ setting. Slice the baguette on a slight diagonal for longer pieces. Place the baguette onto a baking tray and brush the tops with a bit of olive oil.
Place the bread under your oven broil and bake for a few minutes, until the bread is toasted and crispy. This is the fastest way to toast a lot of bread!
How to Make Zucchini Tomato Crostini
One of the reasons I love this recipe so much is that it’s super easy and simple to put together! Here’s how I put it together:
- While the bread is toasting, slice your tomatoes thinly using a sharp knife.
- Once the baguette is done toasting, grab a knife and spread a generous amount of the prepared garlic mayo spread onto each piece of warm bread.
- Top the spread with the sliced tomatoes and season with salt and pepper. Next, add 3 to 4 slices of the fried zucchini on top of the tomatoes.
- Garnish with fresh chopped dill and enjoy immediately!
Serving Suggestions
I recommend enjoying these zucchini tomato crostini right away while the bread is still crispy and warm. They taste so amazing when they’re fresh! I usually make a double portion of these easy appetizers because they don’t last long!
