The Secret to Fluffy Waffles
If you’re looking for extra fluffy and delicious waffles, this buttermilk waffle recipe is just what you need. The secret to the fluffiest waffles is buttermilk! The acid in buttermilk reacts with baking soda, making the batter rise quickly and stay light as it bakes.
Can’t find buttermilk in your grocery store? It’s so easy to make homemade buttermilk. You’ll need 1 3/4 cup (415 ml) whole milk and 2 tablespoons (30 ml) of lemon juice or white table vinegar. Combine the milk with the lemon juice or vinegar, whisk and let the mixture stand for a few minutes. The acid will almost instantly sour the milk, creating buttermilk!
Making the Waffles
I love this waffle recipe because it’s so easy to prepare! Just combine the eggs, buttermilk, oil (or melted butter), sugar and vanilla extract. I don’t add too much sugar to the batter because the cinnamon sugar coating will add lots of sweetness. Whisk together all the liquid ingredients for a few minutes, until the eggs are well beaten.
Combine the dry ingredients in a separate bowl: flour, salt, baking powder and baking soda. Sift the dry ingredients into the waffle batter and mix again, just until the flour is incorporated. While you’re making the batter, it’s the perfect time to preheat your waffle griddle. You need it to be extra hot! Add approximately ¼ to 1/3 cup batter per waffle.
Cinnamon Sugar Coating
Not only do these buttermilk waffles have cinnamon in the batter, I add more cinnamon by dipping the waffles into cinnamon sugar. For this step, just combine white sugar, brown sugar, cinnamon and a bit of nutmeg in a flat dish or casserole pan. Whisk together the sugar and spices until you have a uniform mixture.
Brush the hot waffles with melted butter, then dip the waffles into the cinnamon sugar. Make sure to coat both sides generously with the mixture.
Once you have the cinnamon waffles ready, it’s time to enjoy them! I love to serve them with a heaping pile of fresh fruit and berries on top. Some great options are blueberries, strawberries, blackberries, raspberries, nectarines, or even bananas. I added some kumquats for mine, too!
Add a dollop of homemade whipped cream on top and some pure maple syrup to finish this easy breakfast recipe! To make the whipped cream, simply combine 1 cup chilled heavy cream with 1/3 cup confectioner’s sugar and ½ tsp of vanilla extract. Whisk on high speed for 3 to 4 minutes, until the cream reaches stiff peak stage. Spoon the whipped cream on top, or transfer into a pastry bag and pipe onto each waffle.
