Selecting Your Seafood
The most important and crucial part of sushi, whether at home or in a restaurant, is the seafood: fish, crab, scallops, etc. It’s very important to buy and use only the freshest, sushi-grade seafood for taste and for food-safety reasons. I get my sushi-grade fish from a Japanese supermarket and a local fish market that delivers to sushi restaurants across town. If you’re not sure about the quality, always ask! Most seafood comes frozen and is then thawed in the store.
Sushi Making Tools
You’ll need just a few simple tools for making sushi at home! You can buy a sushi kit (affiliate link) with everything you need or a few individual tools like a bamboo rolling mat and a sharp knife to cut your fish and rolls. I recommend also getting a wooden spoon for the rice and chopsticks for serving.
How to Make Sushi Rice
The most important part of a sushi roll is the rice! Make sure to purchase sushi rice, which is a short grain, sticky rice. Here’s how to make sushi rice that will hold its shape well so your rolls don’t fall apart!
- Rinse the rice in fine mesh strainer under cold water for a few minutes then shake off excess water.
- Place the rice into large sauce pot along with the recommended amount of water. Cook the rice covered over low/medium heat, bring to a simmer, turn the heat down to low and cook just until water is evaporated and the rice is cooked.
- Next, prepare the rice seasonings. In small saucepan, combine the rice vinegar, sugar and salt. Cook this mixture over low heat and stir until the sugar is dissolved. Pour this mixture over the prepared rice and toss with wooden spoon. Cover the rice and let stand for at least 30 minutes before using. Let the rice cool enough so it’s just warm to touch.
Sushi Roll Recipe Ideas
You’ll need sushi-grade rice for making rolls. It’s typically a short grain and when cooked, it’s sticky and holds the roll together. Most sushi rice will indicate right on the package so it’s easy to find! Next, just pick your fillings! And this is the best part! I love to experiment and try different combinations of fillings all the time. I have more on fillings in video recipe and down below in the recipe box! Here are a few of my favorite combinations:
- Tuna Salmon Roll – Tuna, Salmon, cream cheese, tobiko, avocado; topped with salmon, eel sauce, sweet mayo, tobiko, green onions
- Scallop Lobster Roll – Cooked lobster with cream cheese, raw bay scallops; topped with tuna, sweet mayo, eel sauce and a touch of sriracha sauce
- Spicy Tuna Roll – Tuna, sriracha sauce or spicy mayo, asparagus, cream cheese; tempura deep-fried roll topped with spicy mayo, black tobiko, green onions, eel sauce
- Lion King Roll – Snow crab, mayo, avocado, topped with salmon and baked in foil with sauces
- Spicy Salmon Roll – salmon, avocado, cucumber, sprouts, topped with spicy mayo, eel sauce and tobiko.

Sushi Roll Ideas:
- To Make Sushi: Spread a thin layer of rice over each nori seaweed sheet. Moisten your hands with a water and oil mixture to keep the rice from sticking. Top the rice with the desired fillings and roll as show in video demonstration. Top the roll with sauces, tobiko or desired toppings.
- Recipe Idea: Tuna, Salmon, cream cheese, tobiko, avocado; topped with smoked salmon, eel sauce, sweet mayo, tobiko, green onions
- Recipe Idea: Cooked lobster with cream cheese, raw bay scallops; topped with tuna, sweet mayo, eel sauce and a touch of sriracha sauce
- Recipe Idea: Tuna, sriracha sauce or spicy mayo, asparagus, cream cheese; tempura deep-fried roll topped with spicy mayo, black tobiko, green onions, eel sauce
- Recipe Idea: salmon, avocado, cucumber, sprouts, topped with spicy mayo, eel sauce and tobiko

Hey Tatyana, I was wondering about the rice for the sushi. Does it need to be specific kind of rice for the sushi or can it just be any regular white rice?
