Ginger Garlic Swordfish with Mango Salsa

Ingredients for Swordfish Recipe
Here are the main ingredients you’ll need to make this delicious ginger garlic swordfish!
- Swordfish Steaks: use whole, large fish steaks for this recipe for best results. Since swordfish is a very large fish, this is typically the way you’ll find it.
- Soy Sauce: for marinating the fish and for making the homemade teriyaki sauce.
- Brown Sugar, Water, Sesame Seed Oil: for the sauce. You can also use honey, maple syrup or agave syrup in place of brown sugar.
- Ginger & Garlic: make sure the ginger and garlic are very finely minced, pressed or grated.
- Mango: for making the mango salsa topping. Use a ripe, sweet mango for the best tasting salsa.
- Avocado: for the salsa.
- Corn: use canned or fresh cooked corn. If you want to use fresh corn, cook it for 10 minutes, then cut away the kernels using a knife.
- Cilantro & Lime Juice: for seasoning the salsa.
The Ginger Garlic Glaze
I absolutely LOVE the ginger garlic glaze I use for this swordfish recipe! It’s one of my go-to sauces and I even use it for lamb! This glaze is made with brown sugar, soy sauce, rice vinegar, sesame seed oils and lots of ginger and garlic! Just mix everything together in a small pot and let the sauce cook for about 10 minutes. I recommend cooking the sauce over medium heat until it’s thickened and reduced.
The Avocado Mango Salsa
This refreshing salsa really elevates this seafood recipe to whole new level! You’ll love the zesty lime and cilantro, paired with creamy avocado and fruity mango! You can also add corn to mix or even make it with peaches or nectarines instead of mango. This salsa is best when it’s fresh. If you want to make it ahead of time, simply keep the lime juice off until ready to enjoy!
How to Make Ginger Garlic Swordfish with Mango Salsa
You’ll love how easy this delicious seafood recipe is to make!
- Start by marinating the swordfish in soy sauce. Place it into a casserole pan, pour over a few tablespoons of soy sauce and place the fish into the refrigerator.
- Meanwhile, prepare the ginger garlic sauce. Just combine all the ingredients in a small pot and simmer for about 10 minutes, until the sauce is reduced. Also, prepare the mango avocado salsa. Place all the ingredients together in a bowl, except for lime juice. You’ll want to mix and dress the salsa right before serving.
- Grilling Instructions: preheat your outdoor grill to 500F. Grease the grates of the grill with oil. Pat the swordfish dry with paper towels and place it onto the hot grill. Grill approximately 5 to 6 minutes per side, for a 1-inch thick swordfish steak. Grilling time can vary depending on how thick your fish is. For thicker steaks, grill 7 to 8 minutes per side.
- Pan-Fried Instructions: preheat a large, non-stick pan over medium high heat and add a splash of cooking oil. Fry the swordfish for 5 to 6 minutes per side, for a 1-inch thick swordfish steak. Cooking time can vary depending on how thick your fish is. For thicker steaks, fry 7 to 8 minutes per side.
- When ready to serve, spoon a few tablespoons of the prepared ginger garlic sauce over each steak and top with a heaping amount of mango salsa.

Ginger Garlic Swordfish Recipe with Mango Salsa
Ingredients
- 4 large swordfish steaks
- 2 to 3 tbsp soy sauce, for marinating
For Ginger Garlic Sauce:
- 1/4 cup soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 1 tbsp rice vinegar
- 1 tbsp sesame seed oil
- 5 to 6 garlic cloves, finely minced or pressed
- 1 inch ginger root, grated or finely minced
For Mango Salsa:
- 2 ripe avocados, diced
- 1 cup diced fresh tomatoes
- 1 cup corn, fresh or canned
- 1/2 cup ripe mango, diced
- 3 green scallions or 1 shallot, diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp freshly squeezed lime juice
- salt to taste
Instructions
Marinating the Fish:
- Place the swordfish steaks into a dish and pour a few tablespoons of soy sauce over the top, then refrigerate for 30 minutes.
For Ginger Garlic Sauce:
- Prepare the ginger garlic sauce: combine the soy sauce, water, sugar, vinegar, oil, ginger and garlic in small saucepan and whisk. Bring the mixture to a simmer over medium heat and simmer over low heat for 13 to 15 minutes, until reduced in half.
For Mango Salsa:
- For the mango salsa, combine all ingredients necessary for salad (avocados, tomatoes, corn, mango, scallions, cilantro, lime juice, salt). Toss gently, cover and set aside.
Grilling Instructions:
- The fish can be prepared 2 different ways: on the grill or in a pan. For grilling, preheat your outdoor grill to 500F. Grease the grates of the grill with oil. Pat the swordfish dry with paper towels and place onto the grill. Grill approximately 5 to 6 minutes, per side for a 1-inch thick swordfish steak. Grilling time can vary depending on how thick your fish is. For thicker steaks, grill 7 to 8 minutes per side.
Pan Fried Instructions:
- For stovetop preparation: preheat a large non-stick pan over medium high heat and add a splash of cooking oil. Fry the swordfish for 5 to 6 minutes per side for a 1-inch thick swordfish steak. Cooking time can vary depending on how thick your fish is. For thicker steaks, fry 7 to 8 minutes per side.
Serving the Swordfish:
- When ready to serve, spoon a few tablespoons of the prepared ginger garlic sauce over each steak and top with a heaping amount of mango salsa.
