Agar Gelatin – The Vegan Alternative

One of the most frequently asked questions on my channel: what can I replace conventional gelatin with? The answer is agar gelatin! It’s a plant-based gelatin made of seaweed, most prominently used in Asia where seaweed is a major food group. This vegan gelatin option works well in just about any recipe that calls for gelatin!

  • The other main difference between regular gelatin and agar is that agar sets at a much higher temperature. This means the jello can actually set at room temperature and stay firm. I always use agar gelatin for Russian marshmallow, aka ‘zephyr’.

This recipe for vegan jello cups is the perfect use of agar! These raspberry jello cups are packed with amazing flavor, reduced amount of sugar and they set very quickly.

Real Fruit Flavor!

To add real fruit flavor, I used raspberry sauce and mango-peach juice for my video recipe. Feel free to change up the flavors by using concentrated fruit juices or purees! Want your jello cups to be sweeter? Just add more sugar to the agar syrup while it’s cooking. I recommend using about 1/2 cup white granulated sugar and cook the syrup the same way.

Add sliced fruit and berries to the jello before it starts to set for extra garnish! What I love about agar gelatin is that it sets super fast! These will be set and ready to enjoy in no time!

Mango Raspberry Vegan Jello Cups (video)

Delicious and fruity mango raspberry jell-o cups made with vegan gelatin, agar!

Ingredients 

  • 1 1/2 cups fresh raspberries
  • 3/4 cup white granulated sugar
  • 2 cups cold water
  • 1 tbsp agar gelatin
  • 2 cups ice water
  • 1 1/2 cups concentrated mango juice/nectar
  • 2 cups cold water
  • 1 tbsp agar gelatin
  • 2 cups ice water
  • 2 cups diced fruit and berries

Instructions

  • Prepare the raspberry sauce first. Combine the raspberries and sugar in a small saucepan and crush using a large fork or potato masher. Cook the raspberry sauce over medium heat and bring to a simmer. Simmer for 3 to 4 minutes, then pour over a fine-mesh sieve. Using a spatula, press the syrup through the sieve, discarding the remaining seeds.
  • In a separate pot, sprinkle 1 tbsp agar gelatin over 2 cups cold water. Allow the mixture to stand for 5 minutes, then cook over medium heat for 4 to 5 minutes. Bring the mixture up to a low simmer, then add the raspberry sauce. Mix and cook for 1 minute. Remove from heat and add 2 cups ice water. Stir until the ice is completely melted.
  • For the jello to set at a diagonal, set the cups at an angle over a muffin tin. Fill the cups half way and carefully transfer the cups into the refrigerator to set completely. Agar sets fairly quickly. The first layer will set in about 30 minutes.
  • For the next layer, repeat the same process. Sprinkle 1 tbsp agar gelatin over 2 cups cold water. Allow the mixture to stand for 5 minutes, then cook over medium heat for 4 to 5 minutes. Bring the mixture up to a low simmer, then add the concentrated juice. Mix and cook for 1 minute. Remove from heat and add 2 cups ice water. Stir until the ice is completely melted.
  • Pour the jello mixture over the first layer. Add berries and fruit to the jello mixture before it sets. Transfer the cups back into the refrigerator to set completely.
