My go-to recipe for the best roasted garlic lamb chops! The juiciest and most delicious lamb recipe! These roasted lamb chops are seasoned with a garlic and herb spread, made with rosemary, thyme, loads of garlic, mustard, and a touch of maple syrup. This easy recipe yields incredibly juicy and flavorful meat every single time!

Ingredients for Garlic Lamb Chops
Here are my tips for the main ingredients you’ll need to prepare these delicious roasted lamb chops at home. Find the full list of ingredients in the printable recipe card below.
- Lamb Chops – you’ll need to buy a rack of lamb, then slice the rack into individual chops. Look for a rack of lamb that has already been Frenched – fat and tissue removed from the bones at the top – for the best presentation.
- Garlic – garlic is the main flavor and ingredient in the sauce. I recommend using fresh garlic for the best tasting lamb.
- Fresh Thyme & Rosemary – fresh herbs are key for this recipe! They will add incredible flavor and aroma. I don’t recommend using dried herbs for this recipe.
- Maple Syrup – a touch of sweetness really transforms the sauce.
- Mustard – I use both whole grain mustard and Dijon mustard. You can use one or the other if that’s all you have.

Prepare the Garlic & Herb Marinade
The garlic and herb marinade for these garlic lamb chops is simple, yet incredibly flavorful and aroma! Here’s how to make it:
- These lamb chops can be roasted right away, or you can allow them to marinate for 1 to 2 hours, or overnight. When ready to roast, preheat the oven to 425°F.
- For the sauce, start by finely dicing the garlic. Place the garlic into a medium bowl.
- Strip the fresh thyme and rosemary leaves off the stems, then finely chop both before adding to the garlic.
- Add the whole grain mustard, Dijon mustard, maple syrup, salt, black pepper, and olive oil. Mix well.
Preparing the Lamb for Roasting
Once you have the sauce ready to go, it’s time to prepare the lamb chops.
- Start with a whole rack of lamb. Use a sharp knife to carefully remove excess fat off the top portion of the rack, leaving behind a little bit of fat.
- Turn the rack over to the underside and carefully slide the knife underneath the thin membrane overlaying the bones. Lift the membrane, then pull it off using a paper towel for grip.
- Use a sharp knife to portion the rack into individual chops. To make this easier, turn the rack so you can see where the bones are and slice through the meat, avoiding the bones.

How to Make Garlic Lamb Chops
- Arrange the individual lamb chops in a large casserole tray, single layer. Using a spoon or small spatula, apply the garlic and herb marinade all over each lamb chop.
- Your oven should be preheated at this time to 425°F. Turn the oven from the ‘bake’ setting to the ‘high broil’ setting and let the broiler preheat for a few minutes.
- Set the lamb chops under the broiler for 7 to 9 minutes, until they’re golden brown and the sauce is bubbling.
- Turn the oven back to the ‘bake’ setting to 425°F. Continue to roast the lamb chops for an additional 7 to 10 minutes, until the chops reach your desired level of doneness. I like mine at a medium doneness, around 135°F.
- Remove the lamb chops from the oven and rest for about 10 minutes before enjoying.

do you flip the chops halfway through cooking?
Hi Robert! I usually don’t turn them, but if you wanted both sides to be browned, you can. I recommend broiling for 7 to 8 minutes, then turning and broiling the other side. You’ll mostly like need to skip the baking step; use a thermometer to check for doneness as they’ll probably be ready.
Can you skip broiling and just bake them?
Hi Rosanne! Yes, you can also just bake them instead of broiling. They usually take about 25 minutes at 425F. Enjoy!
