Ingredients for Herb & Garlic Potatoes
Here are my tips for the main ingredients you’ll need for these baked potatoes recipe. Find the full list of ingredients in the printable recipe card below.
- Potatoes – I recommend using either Yukon Gold or white potatoes for this recipe. They will hold their shape and texture the best. Stay away from russet potatoes, as they tend to crumble and fall apart after baking.
- Fresh Dill, Parsley, & Chives – fresh herbs will add the most amount of flavor to the potatoes. Freeze-dried herbs will also work in a pinch but won’t have the same amount of aroma.
- Garlic – add tons of garlic for the best garlic potatoes!
- Salted Butter – I love to use salted butter for my savory dishes and especially for this recipe. Unsalted butter will also work well; just adjust the salt to taste.

Preparing the Potatoes
These herb and garlic baked potatoes are super easy to make and they come together in no time! Here’s how to make them!
- Start by preheating the oven to 425°F. Line a large baking sheet with parchment paper, silicon mate, or non-stick foil.
- Fill an extra-large bowl with cold water. Peel the potatoes and drop them into the cold water. This will keep them from browning.
- Once all the potatoes are peeled, rinse them under cold running water, then fill the bowl back up with fresh water.
- Cube the potatoes into 1-inch pieces and spread them evenly onto a baking sheet. Pour the chicken broth over the potatoes and season lightly with salt.
Baking Instructions for Baked Potatoes
Wrap the baking sheet very tightly with a sheet of extra-wide foil. Having no seams will keep the moisture trapped inside the pan and steam bake the potatoes better.
Bake the potatoes at 425°F for 35 to 40 minutes, until the potatoes are fork-tender. Check for doneness at 35 minutes; bake for more time if needed. When done, remove the potatoes from the oven and carefully pull the foil away from yourself to avoid the hot steam.
Herb & Garlic Butter Dressing
While the potatoes are baking, prepare the garlic and herb butter dressing.
- Cube the butter into large chunks, then place into a bowl or saucepan. Melt the butter on the stovetop or in the microwave.
- Grate the garlic using a zester or microplaner, or press through a garlic press. Add the garlic to the butter.
- Chop the fresh dill, parsley, and chives. Add approximately half the herbs into the butter, keeping the rest for garnishing the potatoes later. Stir everything together and let the butter stand at room temperature until ready to use.
Dressing & Serving Garlic Baked Potatoes
Once the potatoes are baked, carefully remove the foil. Stir the butter again, then pour over the potatoes.
Using a rubber spatula, gently toss the potatoes until they’re well coated in the garlic butter. Transfer the potatoes into a serving bowl and enjoy!
If not serving right away, keep the potatoes covered and warm.
