I love this cookie recipe because it’s easily adjustable and you can have a different flavor every time! Feel free to omit or replace the cranberries, pecans and chocolate chips with your desired fillings. Other great options are raisins, macadamia nuts, white chocolate, chopped pecans or almonds. The chocolate drizzle on top is also optional and the oatmeal cookies will taste great without it, too! Or, try a white chocolate drizzle on top instead!
Ever make a batch of cookie dough but want to save some for later? Freezing cookie dough is super easy and perfect for these oatmeal cookies! Just grab a small, flat baking sheet and line it with parchment paper. Drop scoopfuls of the cookie dough onto the paper; no need to space them apart. Allow the cookie balls to freeze completely, then transfer into a freezer ziplock bag or container. When ready to enjoy, just drop the frozen cookies onto a baking pan and bake in a preheated oven.
