Chocolate Cranberry Oatmeal Cookies

If you’re looking for a great oatmeal cookie recipe, look no further! These soft and chewy chocolate cranberry oatmeal cookies are made with oats, dried cranberries, chopped pecans and even some chocolate! This easy recipe is perfect for some weekend cookie baking! My family has been using this recipe for decades and the cookies are always a huge hit!

Ingredients for Cranberry Oatmeal Cookies

This easy cookie recipe requires just a few ingredients! Here are the main ones you’ll need:

  • Butter: you can use salted or unsalted butter for this recipe. If you’re using salted butter, just omit the salt from the recipe. Make sure to soften the butter at room temperature for 30 minutes before using it.
  • Brown Sugar: I love to use brown sugar in my cookie recipes. It adds great flavor!
  • Oatmeal: use any type of oatmeal for this recipe – quick oats, old-fashioned oats, etc.
  • Flour: regular, all-purpose flour works best.
  • Dried Cranberries
  • Chocolate: use chocolate chips or a chopped chocolate bar for the filling. You can also add a chocolate drizzle on top.
  • Pecans: diced pecans add a little bit of crunchiness to these oatmeal cookies!

I love this oatmeal cookie recipe because it’s easily adjustable and you can have a different flavor every time! Feel free to omit or replace the cranberries, pecans and chocolate chips with your desired fillings. Other great options are raisins, macadamia nuts, white chocolate, chopped pecans or almonds. The chocolate drizzle on top is also optional and the oatmeal cookies will taste great without it, too! Or, try a white chocolate drizzle on top instead!

How to Make Cranberry Oatmeal Cookies

These chocolate cranberry oatmeal cookies are so easy to make! You’ll have them ready in no time!

  1. Preheat the oven to 350F and prepare a large baking sheet. In a large mixing bowl, cream together the butter and sugar for 2 to 3 minutes, until the mixture is smooth and creamy.
  2. Next, add the eggs and vanilla and continue to mix until creamy, about 2 minutes. In a separate bowl, sift together the flour, baking powder and all the spices. Stir the dry ingredients into the cookie batter with a wooden spoon or spatula. Add the oats, cranberry, pecans and chocolate and stir again until everything is uniformly combined.
  3. Form medium-sized cookies using about 1 tablespoon of cookie dough for each cookie. Place them about 1-1/2 inches apart onto a lined cookie sheet. Bake in the preheated oven at 350F for 12 to 14 minutes, or until the edges are golden brown. Remove them from the oven and the pan and onto cooling racks to cool.
  4. If desired, melt an additional 1/2 cup chocolate chips over a double boiler or in the microwave, then place into disposable pastry bag and drizzle the chocolate over the cookies. Let the chocolate set completely before storing the cranberry oatmeal cookies in an airtight container.

Freezer Instructions

Ever make a batch of cookie dough but want to save some for later? Freezing cookie dough is super easy and perfect for these oatmeal cookies! Just grab a small, flat baking sheet and line it with parchment paper. Drop scoopfuls of the cookie dough onto the paper; no need to space them apart. Allow the cookie balls to freeze completely, then transfer into a freezer ziplock bag or container. When ready to enjoy, just drop the frozen cookies onto a baking pan and bake in a preheated oven.

  • 3/4 cup butter, softened at room temperature

  • 1 cup semi-sweet chocolate chips
