Easy Beet Crostini Recipe
If you love beets, you’re going to love this easy recipe for beet crostini! These are made with a creamy and garlicky beet spread seasoned with garlic and fresh dill. The garlic packs a punch but it’s balances by the sweet beets and savory dressing. This crostini recipe was originally a salad recipe that my mother made all the time, one of my favorites! I find that the salad recipe works great as a spread, too! This beet crostini appetizer not only looks stunning but tastes amazing! I love the rich magenta color!
Ingredients for Beet Crostini
This beet appetizer recipes is so quick and easy to prepare! Here are the main ingredients you’ll need:
- Beets: you can start with raw beets and cook them down, or you can use precooked beets. These are usually sold in the grocery section.
- Mayonnaise: for making the creamy beet spread.
- Garlic: I love adding tons of garlic to spread to make it extra garlicky and flavorful!
- Fresh Dill
- Baguette: use a classic or rustic French baguette for this recipe. If you don’t have baguette, other thinly sliced bread will also work well.
Making the Beet Spread
The first step to making this easy beet appetizer is preparing the beets! If you don’t have time to cook the beets, use store-bought, precooked beets instead.
- The beets can be boiled in water or roasted in the oven! For boiling, simply cut the beets in half if they’re very large and drop them into a pot of water. Boil the beets over medium heat for about 30 to 40 minutes, until they’re fork tender.
- For oven-roasted beets: wrap the beets in foil and place them onto a baking sheet. Roast them at 400F for about 30 to 40 minutes, depending on the size, until the beets are tender.
- Once the beets are cooked and cooled enough so you can handle them, use a paring knife to peel them. Grate the beets into a large mixing bowl.
- Dress the beets with mayonnaise, add the garlic and fresh dill, and season the spread to taste with salt.
- This beet spread can be made ahead of time, too! Just keep it stored in the refrigerator!
Assembling the Beet Crostini
Once you have the beet spread ready to go, it’s super easy to assemble these creamy beet crostini!
- Start by slicing your baguette on the diagonal for longer slices. I like to place the bread onto a baking sheet and toast the bread in the oven under the broiler.
- Spread a tablespoon or 2 onto each slice of toasted baguette.
- Garnish the top with a sprinkle of fresh dill and enjoy!

- 1 teaspoon sea salt
