First up, I’m sharing a gluten-free recipe! Second, I have an incredible rhubarb cake recipe that you must make right away! My ‘Strawberry Rhubarb Cake’ is beyond delicious and screams ‘spring baking’ like none other! I add loads of fresh rhubarb and strawberries directly into the Victoria sponge cake batter, frost the cake with a simple whipped cream frosting and a home-made strawberry rhubarb jam. Every bite is bursting with flavor from the sweet whipped cream, the fluffy cake layers to the tart fruit jam. This is one rhubarb cake recipe I know I’ll be using and sharing over and over again!
My third recipe is perfect with a cup of coffee in the morning. These buttery ‘Strawberry Almond Scones’ are bound to become a favorite! These strawberry scones are so light and fluffy, not at all dense like most are. The secret – Bob’s Red Mill Almond Flour. The almond flour makes the dough more soft, yielding an unbelievably light treat! I use freeze-dried strawberries and strawberry for this recipe to add maximum strawberry flavor!
