Cranberry & Brie Turkey Sandwich (Thanksgiving Leftovers)
If you have some leftover turkey from your holiday dinner, this recipe is for you! The most delicious apple, avocado, cranberry, and brie turkey sandwich with crispy, toasted bread. Fill it with arugula and dress the bread with cranberry sauce and Dijon mustard. Every bite is bursting with incredible flavors! It’s the perfect way to use up some of that leftover turkey!

Ingredients for Turkey Sandwich
Here are the main ingredients you’ll need to make this delicious Thanksgiving leftovers sandwich. Find the full list of ingredients in the recipe card below.
- Bread: almost any type of bread will work great for this recipe! Left over croissants, French baguette, ciabatta, or classic rustic bread.
- Turkey: any part of your leftover turkey will work! If you don’t have leftover turkey, you can use sliced rotisserie chicken, or turkey deli meat. I also love to use this easy Garlic & Herb Turkey Breast recipe.
- Apples: any type of apples will work! I like to use crispy varieties, like Granny Smith, or Gala.
- Arugula: I love this type of lettuce for a turkey sandwich. Spinach or mixed spring greens will also work.
- Cranberry Sauce: canned or homemade sauce will work great!
- Cheese: brie cheese is perfect for this sandwich; however, you can use other types of cheeses, too. Muenster, goat cheese, or smoked gouda is great, too!
Toasting the Bread for Sandwiches
These cranberry and brie turkey sandwiches can be made with just about any type of bread! Some of my favorites are croissants and rustic French bread. Use thick sliced bread for best results.
- Pan-Fried: preheat a frying pan over medium heat with a few teaspoons of salted butter. Once melted, add in the bread and toast for a few minutes on each side until the bread is crispy and golden.
- Broiler/Toaster: spread a bit of butter or brush on oil onto each slice of bread first, then place the bread onto a baking sheet. Broil for a few minutes until the bread is nicely toasted.
How to Make a Brie & Turkey Sandwich
Putting this turkey sandwich is super quick and easy! Here’s how to assemble it!
- Prepare all the toppings. Thinly sliced the apples using a sharp knife or a mandoline slicer. Slice the brie cheese into thin slices or wedges. Slice your leftover turkey into pieces that are easy to add to the sandwich. Slice the avocado.
- Spread a generous amount Dijon mustard and/or mayonnaise onto one slice of bread, and cranberry sauce on the other side. Add the sliced brie to one slice, then toast it in the oven under the broiler for a few minutes until it’s melted.
- Add the sliced apples, sliced turkey, sliced avocado, and top with fresh arugula. Season the avocado and turkey with salt and freshly ground black pepper to taste.
- Top with the other slice of bread and sandwich everything together. Enjoy the sandwich will it’s warm and crispy.

Ingredients
- 8 slices bread, or 4 croissants
- 2 tbsp butter
- 1/4 cup Dijon mustard
- 1/4 cup mayonnaise
- 1/2 cup cranberry sauce, any type
- 8 oz brie cheese
- 1 large avocado, sliced
- 1 large apple, sliced
- 2 cups arugula
- 1/2 lb turkey, breast or thigh
- salt and pepper, to taste
