An easy beef appetizer that’s always a hit! These easy roast beef sliders with horseradish spread are easy to make and packed with incredible flavor! They’re made with hearty and aromatic slow-cooked beef chuck roast, a creamy horseradish aioli spread with chives, melty Havarti cheese, and soft dinner rolls. Enjoy them as an appetizer, or for lunch or dinner.

Ingredients for Roast Beef Sliders Recipe

Here are my tips for the main ingredients you’ll need to make these roast beef sliders. Find the full list of ingredients with measurements in the printable recipe card below.

  • Beef Chuck Roast – cube the roast into large chunks. I usually go with a roast that doesn’t have too much fat. You can also use other cuts of beef, such as tri-tip.
  • Horseradish – for the creamy sandwich spread. Horseradish really complements the rich roast beef. Feel free to adjust the amount in the recipe to your tastes.
  • Cheese – you can use any type of soft, melty cheese for the sandwiches – Havarti, provolone, or mozzarella are all great options.
  • Dinner Rolls – just about any type of rolls or dinner rolls will work well for this recipe. You can use homemade or store-bought rolls.

Preparing the Slow-Cooked Beef Roast

These delicious beef sliders are made with hearty and aromatic shredded, slow-cooked beef chuck roast. Here’s how to make it:

  1. Cut the beef chuck roast into large chunks – 3 to 4 inches in size.
  2. Preheat a large pot or deep sauté pan over medium-high heat and add a drizzle of avocado oil.
  3. Season the beef generously with sea salt, then add to the hot pan. Brown the beef in batches to avoid over-crowding the pan. Brown the beef on all sides, then remove it into a separate bowl.
  4. Into the same pan, add the sliced onion and sauté over medium heat for 5 to 7 minutes until softened. Add the sliced garlic and cook for 1 minute.
  5. Next, add all the seasonings and spices: sea salt, freshly ground black pepper to taste, chili powder, paprika, coriander, cumin, sugar, garlic, onion, and bay leaves. Stir and cook the spices for a few minutes.
  6. Pour in the water and return the beef back into the pan.
  7. Bring the water up to a simmer over high heat, then reduce the heat to the lowest setting and cover the pan.
  8. Cook the beef over low heat for 2 hours, until it’s very tender and falls apart easily when pulled with a fork. Keep the beef warm until ready to make the sliders.

Slow-Cooker Instructions for Roast Beef

Do you want to prepare the roast beef for these sliders in a slow cooker? Here’s how to do it:

  1. Follow the instructions as written above – browning the meat and cooking the onion, garlic, and spices.
  2. Transfer the browned beef into a slow cooker and add the onion, garlic, and herb mixture. Pour in the water.
  3. Cover the slow cooker and cook on ‘high’ heat for 7 to 8 hours, until the beef is very tender and pulls apart easily.

Easy Horseradish Spread for Sliders

These beef sliders are made even more delicious with an easy horseradish spread! The horseradish helps cut through the richness of the beef and adds incredible flavor!

  1. In a small mixing bowl, combine the mayonnaise and horseradish. You can adjust the amount of horseradish to taste.
  2. Season the spread with salt and ground black pepper, to taste. Add the dried garlic and smoked paprika, along with the fresh chopped chives and parsley.
  3. Stir everything together and keep refrigerated until ready to use.

How to Make Easy Roast Beef Sliders

Once the beef is cooked and ready, it’s time to make some delicious roast beef sliders!

  1. To assemble the sandwiches, start by preheating the oven broiler on the ‘high’ setting.
  2. Remove the cooked beef from the broth into a large mixing bowl. Use tongs and a fork to finely shred the beef; smaller pieces will fit better onto the sliders.
  3. Use a knife to split open the dinner rolls, if needed. Arrange the dinner rolls on a baking sheet lined with parchment paper or non-stick foil. Spread a generous amount of horseradish spread onto both halves of each roll.
  4. Add a generous amount of shredded beef onto one half of each dinner roll. Cut the cheese into small squares or triangles and add a slice or two over the beef.
  5. Broil the sandwiches in the oven for 5 to 7 minutes, until the cheese is melted and bread is toasted.
  6. Sandwich the sliders together and garnish with fresh herbs, if desired.
  7. Fill small ramekins with the hot beef broth and serve on the side with the sliders.
  8. These beef sliders are best enjoyed hot with warm broth.

Make-Ahead Instructions for Beef Sliders

Do you want to prepare part of this recipe ahead of time? It’s a great time-saver idea! Here’s what I recommend doing:

  1. Cook the beef according to instructions, then cool the beef in the broth and refrigerate until ready to use. You can keep the beef refrigerated for up to 3 days.
  2. You can also prepare the horseradish spread ahead of time. I recommend keeping it covered in the refrigerator for up to 3 days.
  3. When you’re ready to make the beef sliders, reheat the beef in the broth on the stovetop. Cook over medium heat until the broth is boiling and boil for 5 minutes.
  4. Continue with the recipe as written and enjoy!

Ingredients 

For Beef Roast:

  • 2 lbs beef chuck roast
  • 1 tbsp avocado oil
  • sea salt
  • 1 large sweet onion, sliced
  • 6 medium garlic cloves, finely sliced
  • 2 tsp sea salt
  • ground black pepper, to taste
  • 2 tsp chipotle chili powder
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp dried garlic
  • 1 tsp dried onion
  • 1 tsp sugar
  • 2 bay leaves
  • 2 cups water

For Horseradish Spread:

  • 1/2 cup mayonnaise
  • 3 tbsp horseradish
  • 1/2 tsp dried garlic
  • 1/2 tsp smoked paprika
  • ground black pepper
  • 1/2 tsp sea salt
  • 2 tbsp fresh chopped chives
  • 2 tbsp fresh chopped parsley

For Sliders:

  • 10 small dinner rolls
  • 5 slices Havarti cheese , cut in half; can also use mozzarella or provolone
