There’s something unique and delicious about pomegranates that has captured my heart and tastebuds forever! I love the sweet and tangy flavors and the fun texture. These pomegranate macarons capture that beautiful, fruity flavor paired with chocolate. These chocolate pomegranate macarons are the perfect combination of flavor! The sweet, chocolate-y almond shell complements the tart pomegranate butter cream, creating an unforgettable treat!

If you’re a chocoholic like me, try dipping these macarons into melted chocolate for even more flavor. Just melt 1 cup of dark chocolate or white chocolate melts in a small bowl. Dip the cookies half way, then set onto a wire rack for the chocolate to set completely. You can also add sprinkles to make these even more extravagant!

As with all macarons, I recommend giving these treats some time to ‘mature’ for maximum flavor. Just place the macarons into an airtight container once you have them assembled. Refrigerate the cookies for at least 2 days, allowing the macaron shell to soften. Remove them from the fridge a few hours before enjoying, to allow the buttercream to thaw.
