Russian Blini with Caviar

Ingredients for Caviar Blini
Here are the main ingredients you’ll need to make these caviar canapes!
- Caviar: I used salmon roe for this recipe but you can use any type of caviar for the topping. I also love black sturgeon caviar!
- Dill: use fresh dill for making the spread and for adding a bit of garnish to the top.
- Sour Cream: for making the creamy spread. You can also use crème fraiche.
- Eggs, Milk, Butter, Flour: for making the mini blinis or pancakes.
- Mini Pancakes: want to cheat?! Buy pre-made, store bought mini pancakes and skip making your own!
Making the Blini – Mini Pancakes
Here’s how to make the easy blini or mini pancakes for this caviar appetizers:
- Whisk together in a large bowl the egg, milk, and salt, until the egg is well beaten. Sift together the flour and baking powder and whisk into the egg mixture. Whisk until the batter is super smooth and free of clumps.
- Preheat a griddle or large frying pan over medium heat. Add a little bit of oil or nonstick spray, if necessary. Use about 1 tablespoon of batter for each blini. Cook the pancakes on the first side for about 1 minute, then turn and cook for another 30 seconds.
- Place the hot pancakes onto a wire rack to cool.
How to Make Russian Blini with Caviar
Once you have the mini pancakes ready, it’s super easy to put these together! You can also use store-bought mini pancakes!
- Make the sour cream spread. Simply combine the sour cream and fresh dill in a small bowl.
- Add a dollop of sour cream onto each pancake.
- Top with a spoonful of caviar and garnish with a sprig of fresh dill.
- Enjoy these right away, or keep them stored in the refrigerator.

Ingredients
For Blini:
- 1 large egg, at room temperature
- 3/4 cup milk, at room temperature
- 2 tablespoons butter, melted
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
For Topping:
- 1/2 cup sour cream
- 2 tablespoons fresh dill, chopped
- 1/2 cup salmon roe or other caviar
Instructions
- Whisk together in a large bowl the egg, melted butter, milk, and salt, until the egg is well beaten. Sift together the flour and baking powder and whisk into the egg mixture. Whisk until the batter is super smooth and free of clumps.
