Easy apple cobbler recipe, with fluffy buttermilk biscuits and vanilla ice cream! This apple dessert tastes like apple pie, but requires a fraction of the effort!

Instructions
Preparing for the Recipe:
Preheat the oven to 375°F. Prepare a medium-large sized casserole pan for the recipe, about 9x13-inches in size.
Wash and pat dry the apples for the filling. Cube the butter needed for the buttermilk biscuits and place it into the freezer to chill.
Making the Apple Filling:
Peel the apples first, then cube them into small chunks, about ½-inch in size. You don’t want the apple chunks to be too big or too small.
Place the apples into your casserole pan. Squeeze a few tablespoons of fresh lemon juice over the top.
Next, add the sugar, vanilla extract, salt, all-purpose flour, cornstarch, ground cinnamon, and nutmeg. Use a spatula to toss everything together until the apples are well coated and no dry flour remains.
Cube the ¼ cup butter into tiny pieces and drop the butter over the apples evenly.
Making the Biscuits:
For the biscuits, combine all the dry ingredients: flour, sugar, baking soda, baking powder, salt, and cinnamon. You can use a food processor or do this in a large mixing bowl.
Next, add the cold butter. If using food processor, simply pulse the butter and dry ingredients together until a crumbly mixture forms.
You can also use a pastry cutter to cut the butter into the flour. Alternatively, you can grate the cold butter into the dry ingredients using a cheese grater. Just toss the grated butter with the flour.
Next, add the buttermilk and vanilla extract to the mixture. Use a spatula to combine everything together, just until the biscuit batter is uniform.
Drop large dollops of the biscuit batter over the apple filling. Sprinkle the top of the biscuits with sugar crystals, if desired, for extra texture.
Baking Instructions:
Bake the apple cobbler at 375°F for 40 to 45 minutes. After 20 minutes, gently lay a sheet of foil over the casserole dish to prevent the biscuits from burning.
Bake until the apples are cooked and tender and the biscuits are golden brown. The apple mixture will be bubbling around the edges.
Serving Suggestions:
The apple cobbler filling will be extremely hot just as you remove it from the oven! Allow the cobbler to cool for about 20 minutes before enjoying.
I recommend serving this apple cobbler warm, with or without vanilla ice cream on the side. Whipped cream is also a great option.
