Easy and delicious spinach salad recipe with feta cheese, raspberry vinaigrette, zucchini and avocado!
8 to 10cupsorganic baby spinach
1large avocado, sliced
1/2 to 1red bell pepper, sliced
1small zucchini, sliced
4 to 5white mushrooms, sliced
1/4cuppistachios or slivered almonds
1/3cupcrumbled feta cheese
2tbspsoy sauce or tamari, optional
You can prepare this salad in one large bowl and serve it family style. Or, prepare it in individual bowls. First, add a generous amount of fresh, organic baby spinach. I love baby spinach because it's very soft and more sweet in flavor.
Next, it's time to add the veggies. I top the spinach with sliced red bell pepper, sliced green zucchini, sliced avocado and mushrooms. Feel free to change up the toppings to include your favorites! You can also use sliced cucumbers in place of the raw zucchini. For some added crunchiness, I add salted pistachios or slivered almonds. Pumpkin seeds would also work great for this recipe! Top everything off with crumbled feta cheese for extra creaminess!
Once you have the feta spinach salad assembled, it's time to add the dressing! Add the dressing once you are ready to serve. Drizzle the salad dressing over the top. If desired, season the salad with a few dashes of soy sauce, or season with salt to taste.
