Quick and easy, cheesy taco pasta with ground beef, cheese, beans and more!
Ingredients
1poundground beef
olive oil
Salt and black pepper
1large red onion, diced
1large red bell pepper, diced
1large green bell pepper, diced
diced jalapeno, optional
1cupsweet corn
1cupbeef broth
1/2cupheavy cream
4ozcream cheese, softened
3cupscheddar cheese blend
1tspEACH: chili powder, smoked paprika, garlic powder
1/2tspground cumin
1cupblack beans, optional
small handful chopped cilantro
3green onions, diced
2large tomatoes, diced
1lime, for serving
1poundpasta of choice
Instructions
Fill a large pot with water and bring to a boil for the pasta. Cook the pasta while preparing the sauce.
Preheat a large frying pan over medium-high heat and add a drizzle of olive oil. Add the ground beef and season generously with salt and ground black pepper. Fry the beef until it's well browned all over. Remove the browned beef into a separate bowl and set aside.
Into the same pan, add the red onion and peppers. Saute for 3 to 4 minutes, then add the corn and saute for another 2 to 3 minutes. The onion and peppers need to be tender. Remove the mixture from the pan into the same bowl as the ground beef; set aside.
Next, prepare the sauce. Pour in the beef broth and cream. Add the cream cheese and cheese blend. Cook the sauce over medium heat, whisking until the cheese is completely melted and the sauce is smooth. Add all the spices and a small bit of chopped cilantro.
Return the browned beef, pepper and corn mix and add the black beans. Use a spatula to combine all the ingredients together. Drain the cooked pasta, then add to the pan and mix into the sauce until well-combined.
When ready to serve, garnish the top of the dish with chopped tomatoes, cilantro and green onion and serve with a lime wedge.
