Preheat the oven to 400°F; if baking the sausage. Line a large baking sheet with parchment paper or non-stick foil.
Place the ground pork and ground turkey into a large mixing bowl. Add all the seasonings and spices – dried garlic, dried onion, paprika, sea salt, black pepper, maple syrup, and fresh parsley.
Use your hands to knead the two meats together, mixing until a uniform mixture forms.
Use a large scoop to measure out the meat mixture for each sausage patty. I typically use 6 tablespoons, or two, 3-tablespoon scoops, for each patty.
Gently roll each scoop into a ball and place it onto parchment paper. Use your fingers to gently press the sausage into a patty.
Cooking Methods for Sausage:
Method 1 – Baking: press the sausage into patties on a baking sheet lined with parchment paper. It’s okay if the sausage patties touch; you can separate them afterwards with a knife.
Bake at 400°F for 18 to 22 minutes, until the internal temperature reaches 165°F.
Once baked, remove the patties from the baking sheet and lightly pat them dry with paper towels.
Method 2 – Frying: press the sausage into patties on a sheet of parchment paper. Preheat a large frying pan over medium heat and add a drizzle of avocado oil.
Fry the patties for about 5 to 6 minutes per side, until the internal temperature reaches 165°F.
Breakfast Sandwich Recipe:
For the breakfast sandwich recipe, first toast the English muffins. I like to toast mine with butter on a griddle. A toaster oven will also work great.
Prepare fried eggs next. Preheat a large, non-stick frying pan over medium heat. Add a few teaspoons of butter, then drop eggs into the melted butter. Cook the eggs to your desired level of doneness; I like the eggs over-medium.
Prepare the mashed avocado next. Scoop the avocado into a large bowl and season with salt, pepper, and a squeeze of lemon juice. Mash the avocado with a fork into a chunky spread.
To assemble the sandwiches: first, spread a bit of mayonnaise onto each toasted English muffin. Add a generous amount of mashed avocado on one half.
Add a sausage patty, followed by a fried egg, then top with cheese of your choice. Sandwich the two halves of the muffin together and enjoy!
