Quick and easy tomato bruschetta recipe with heirloom tomatoes, mozzarella cheese and basil!
Ingredients
1large, ripe organic heirloom tomato
1/2small shallot, minced
4ouncesfresh mozzarella cheese, diced
8 to 10basil leaves, chopped
1tablespooncapers
2tablespoonsolive oil
1tablespoonbalsamic vinegar
ground black pepper and salt to taste
1/2French baguette, toasted
Instructions
Dice the tomato into pea-sized cubes and place into a small bowl. Finely mince the shallot. Dice the mozzarella cheese. Gently roll basil leaves together and chop.
Add drained capers, along with olive oil, balsamic vinegar and season with salt and pepper. Serve on top of warm, toasted bread. If not serving immediately, prepare ingredients but wait to season with oil, vinegar, salt and pepper until ready to serve.
