Quick and easy teriyaki salmon with homemade sauce and avocado mango salsa topping!
Ingredients
2poundswild salmon, portioned
For Maple Teriyaki Sauce:
1/4cupsoy sauce
1/4cuppure maple syrup
1/4cupwater
1tbspsesame seed oil
1 tbsp rice vinegar
1tbspginger puree
5 to 6garlic cloves, pressed or very finely minced
For Mango Salsa:
2mediumripe mangos
1 large avocado
2mediumtomatoes
1smallred onion, or large shallot
small bunch fresh cilantro, chopped
juice from 2 limes
salt , to taste
2tbspolive oil
Instructions
Prepare the maple teriyaki sauce first. Combine the soy sauce, maple syrup, water, ginger, garlic, sesame seed oil and rice vinegar in a large measuring cup and whisk the ingredients together.
If needed, portion the salmon into serving size fillets. Place the salmon into a large, deep casserole dish and pour the prepared teriyaki sauce over the top. Place the salmon into the refrigerator and marinate for 15 to 45 minutes.
Meanwhile, prepare the mango salsa. Peel and dice the mangos into pea-sized pieces. Also do this for the avocado. For the tomatoes, seed them first, then dice. Dice the onion and chop the cilantro. Place all the ingredients into a large mixing bowl but do not dress yet!
Remove the salmon from the fridge and carefully remove the salmon from the marinade onto a tray lined with paper towels. Pat the salmon lightly to dry it. Pour the remaining teriyaki sauce into a small saucepot. Bring it to simmer, then cook over low heat for about 10 minutes ,until the sauce is reduced.
Preheat a large frying pan over medium-high heat and add a few tablespoons of avocado oil. Once the oil is extra hot, add the salmon skin-side down first. Fry the salmon for a few minutes per side over medium-high heat, or until the salmon is nicely browned all over. Thinner cuts of salmon will cook faster. Remove the fried salmon onto a wire rack to rest.
Once the salmon is done, finish the salsa. Squeeze the lime juice over the top, season with salt and add the olive oil. Use a large spoon to toss everything together.
For serving, place the salmon onto a plate, then spoon the teriyaki sauce over the top. Add spoonful’s of mango salsa over the top and enjoy. If desired, serve with a side of steamed white rice.
