Learn how to make baked apple roses with French puff pastry, thinly sliced apples and apple butter! Super easy to make, beautiful, and delicious!
Ingredients
1sheetFrench puff pastry, I like the Dufour brand
3large apples
1/2cupapple butter
1lemon
water
1largeegg, well beaten
ground cinnamon
For Sugar Syrup:
1/2cupsugar
1/2cupwater
2tbsplemon juice
Instructions
Preparing the Apples:
Wash and dry the apples first, then cut the apples in half and remove the core. Using a sharp knife or a mandoline slicer, cut the apples into the thin slices, about 1/6th inch thickness.
Bring a medium sized saucepan filled with water to a rolling boil. Squeeze in the juice of 1 lemon, then add the sliced apples in batches.
Cook the sliced apples for about 30 to 45 seconds, just until they’re slightly softened. Scoop out the sliced apples with a slotted spoon, then place onto a tray lined with paper towels. Let the apples cool down before handling them.
Preparing the Puff Pastry:
Store-bough puff pastry always comes frozen and needs to be thawed. You can thaw it overnight in the refrigerator, or at room temperature for an hour. Otherwise, keep the dough refrigerated until you’re ready to use it.
Remove the puff pastry from the packaging and lay it out flat on your work surface. Using an off-set spatula, spread the apple butter evenly over the entire sheet.
Section the puff pastry into 6 to 10 segments, widthwise (the strips shouldn’t be too long).
Making Apple Roses:
For each apple rose, lay the apple slices overlapping onto one side of the dough, making sure the apples overhang the edge. Fold the other side of the dough over, then gently start rolling the dough into a spiral. Watch my video tutorial to see how it’s done.
If the puff pastry sticks to your work surface, slide a knife underneath it to lift the dough.
Baking Instructions:
Preheat the oven to 375F. These apple roses can be baked on a baking sheet or using a jumbo muffin tin. If using a muffin tin, spray the inside with non-stick baking spray. If using a baking sheet, line it with parchment paper.
Place the shaped apple roses either onto your baking sheet or into the muffin tins. Brush the beaten egg over each rose using a pastry brush. Bake the roses at 375F for 40 to 45 minutes, until they’re a rich, golden color.
This longer baking time is need to bake the dough on the inside.
If the roses start to brown too much, cover them with a sheet of foil to prevent them from browning further and burning.
Making Sugar Syrup:
Next, prepare the sugar syrup. In a small saucepan, combine the sugar, water and lemon juice. Bring the syrup up to a simmer and cook for about 7 minutes, then remove from the heat.
Once the apple pastries are baked, use a silicon brush to generously coat each pastry. Next, remove the pastries from the baking sheet/tin and onto a wire rack to cool.
These can be enjoyed right away or stored at room temperature for later.
