Optional: white chocolate chips; large sugar granules
Instructions
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, combine peanut butter, butter, egg and vanilla; stir or whisk until mixture is uniform. Add sugars and stir well. In a separate bowl, combine flour, baking soda and salt. Add flour mixture to cookie batter and use a spatula to mix until soft cookie dough forms.
Measure out dough using 1-tablespoon measuring spoon; adjust size to your liking. Roll dough to form small balls, then press down balls with fork to create decorative top.
Alternatively, roll dough balls in sugar granules and proceed as usual. Can also add 1 cup white chocolate chips to cookie dough. Measure out small dough balls onto parchment paper.
Bake cookies for 12-13 minutes, just until edges turn golden. Remove from pan onto cooling rack to cool completely. Store in airtight container.
