Cold winter months call for warming comfort foods, like this creamy sweet potato, tomato and sausage soup. This new soup recipe is our new favorite! My husband and I literally could not stop eating it; it’s so incredibly delicious! It’s creamy and flavorful and packed with so much incredible flavor. And, it’s a great way to include a ton of veggies in a single dish. This sausage soup is made with pineapple sausage (but you can use any kind), loads of sweet potato, mushrooms, zucchini, onion, garlic and even BACON! I love the smoky flavor of the bacon in this soup – it just makes this soup that much better. I love to enjoy this soup with plenty of toasted baguette on the side, too.
I typically stick with the same, tried-and-true soup recipes, so when I say that this new recipe is simply the best, I mean it! I created this soup recipe almost accidentally when I was cleaning out my fridge and needed to use up some ingredients and thought – why not try a new soup recipe? And voila, this recipe was created! And I’m SOO glad that I experimented that day! I love this recipe so much, I’ve already made it multiple times!
