This recipe for crispy potato galette with poached egg is one of mine and my husband’s favorite recipes! It’s a restaurant quality dish that you can make at home to impress your family. The potatoes are seasoned with thyme and then topped with smoked salmon, poached egg and creamy avocado. This delicious brunch recipe is sure to become a favorite. If you have the time to peel and grate your own potatoes, they work best for this recipe. Realistically, I’m super lazy in the morning so I stock my freezer with frozen potato hash browns and they work beautifully for this recipe! Season the potatoes well and fry them in butter for even more flavor. The toppings are super easy! All you need is some delicious smoked salmon (I like to use Norwegian smoked salmon from Costco), sliced avocado and a few poached eggs. Sprinkle the top with a bit of fresh dill and capers for the finishing touch.
In addition to an already incredible dish, try serving this potato galette with some home-made chimichurri sauce. The fresh flavor of the sauce really brightens up the dish and takes it to a whole new level!
