This is one of those recipes that I keep coming back to time and time again! My husband always requests this dish, especially during the fall and winter months when he’s craving for some comfort food. You can also serve this dish with simple mashed potatoes instead of the risotto, and with a simple salad on the side. Some lamb can have a very strong gamey scent. I recommend looking for lamb that’s imported from New Zealand; it tends to be much milder in flavor. If you don’t enjoy the gamey flavor of lamb, go with just beef shanks instead.
