I recently discovered the convenience of a slow-cooker and now I’m hooked! The pork is so tender after cooking for hours and loaded with amazing spices and flavors. I serve the tacos in warm tortillas with home-made mango salsa, guacamole, sour cream and chipotle sauce. This recipe will feed a crowd, or have plenty left-over for the next day.
Since the day I tried this recipe, I have shared it so many times with my guests and family. I serve these tacos all summer long; I’ve lost count how many times I’ve made these! Guests coming over for the evening? Pork going into the slow-cooker! I whip up the guac and salsa right before serving and it takes only minutes. Make sure to buy extra taco tortillas because you’ll be needing them – I can easily have 8 or 10 of these!
